“As Easy As Pie”

“As easy as pie” . . . pretty misleading if you ask me.  I can’t really say any of my baking endeavors have been “easy”.  Many times the mood to bake will strike me when I am out of one or more ingredients, and I absolutely recall a stringy “made from scratch” pumpkin pie episode in college. I would definitely say that the baking experience became even more interesting as I added children to the mix (pun intended).  Egg shells, flour covered floors and sticky fingers are no stranger to the “baking” experience in our home.  From rolling out the dough into a circle-ish shape, then adding the correct ratio of sweet and tart in the filling, to finally finding the perfect amount of bake time and doneness for all parts of the pie, I’d say the journey to a completed pie is quite the opposite of “easy.”
